Turkish Delight Ice Cream

One thing I have noticed of late is that Stephen and Fussy are both obsessed with certain flavours. They both love double salted Dutch licorice and sour snakes. They also love mint slice biscuits and blood orange sorbet.
Their greatest 'shared' indulgence to date would have to be Turkish Delight. Hence, since the arrival of my ice cream maker they have both been harassing me to make some Turkish delight ice cream.
The other day I finally conceded.
They now have two litres of the stuff sitting in the freezer and I suspect it will all but disappear by Saturday afternoon, at the latest.

Turkish Delight Ice Cream
Ingredients
600ml of full fat organic milk
600ml of organic cream, heavy
1 cup of caster sugar
4 organic egg yolks
½ cup of Rose water
200g of rose flavoured Turkish delight, roughly chopped
A splash of rose pink food colouring
Method
1. Put the milk and the cream in a large saucepan and gently heat. Meanwhile whisk the egg yolks and the sugar in a large mixing bowl until thick and pale. Add the eggs and sugar to the hot milk and cream and whisk.
2. Continue to stir gently until it thickens to coat the back of a spoon or silicone spatula. Remove from the heat and allow to cool.
3. Transfer the mixture to a bowl and stir in the rose water and splash of rose pink food colouring to tint it to a pale pink. When it is cool, place the bowl in the refrigerator for at least 30 minutes. Put the mixture in your ice cream maker and proceed according to the manufacturers instructions.
4. Add the chopped Turkish delight to the ice cream and then freeze until required.

Wow, what an idea! I can already taste the texture of the Turkish Delight from your beautiful photos - all squishy and sweet, mmm! Great color in that ice cream too! Have you ever made your own Turkish Delight? I'd love to try one day..

A very interesting ice cream concept. I like the loukoumia made with grape must...a nice caramel taste.

I have this weird thing when I get a little sad when people like things I don't like. My husband is Dutch and LOVES the salted licorice and turkish delight. I do not. But, this post makes me want to try try try again to like them. The ice cream photo is beautiful.

Sudeshna the egg yolks give the ice cream that creamy, smooth richness. The more egg yolks you add the richer the ice cream.
