Cardamom & Orange Truffles

Fathers Day at our house is pretty low key and very much hand-made. Both Hoover and Fussy made cards, poems and gifts for their papa at school and kindergarten last week that they then gave him on Sunday morning.
We then made him a big 'bacon breakfast' and loafed around in our pyjamas for most of the day. Despite it being Father's Day, Huxley insisted that he still man the coffee machine. In the afternoon Hoover and I made some cardamom and orange truffles. Well if truth be told I made the truffles and she licked the bowl clean.

If cardamom and orange does not take your fancy, then why not try and infuse the thick cream with other flavours such as - cinnamon, lavender or rosemary.
Cardamom & Orange Truffles
Adapted from The Modern Vegetarian 2009
Ingredients
1 cup of thick cream
250g dark chocolate (no less than 70%) broken in small pieces
2 tbsp unsalted butter, diced
Zest of an orange
20 cardamom pods, crushed
Unsweetened cocoa for dusting

Method
1. In a saucepan heat the cream with the orange zest and crushed cardamom pods. Remove from the heat and allow it to cool for 30 minutes so to infuse.
2. Reheat the cream to almost boiling and then strain over the chocolate pieces and butter and stir until smooth. Pour the melted chocolate mixture into a container and refrigerate until firm.
3. Using a melon baller form truffles and then lightly dust truffles in cocoa powder and reshape by using your hands. This amount of chocolate mixture should give you approximately 25-30 truffles. Refrigerate until required.

Wow! Lucky lucky dad! And I really think Hoover had the best job of all, smart girl!
Orange and Cardamon are a nice combination. I think I will have to whip up this batch just for kicks for the Xmas season!

These are lovely truffles and what a wonderful father's day treat.
What an interesting combination of flavors, I'll have to try this next time. Earl grey and lavender (as separate flavors) make great truffles too.
wow - these look super yum! i love cardamom more than anything and i'm sure it's great with orange and dark chocolate - two other ingredients you can't go wrong with!!
