Marinated Chicken with Cumin, Coriander & White Wine

Tired of eating chicken the same old, boring way? Well look no further as this simple marinade is the answer you've all been waiting for. I kid you not it's dead easy to prepare and even the most fastidious of eaters will love it. Yes - Fussy devoured this chicken despite the obvious presence of green!
Will wonders never cease?
Had I known the chicken was going to be such a hit with the kids I would have made twice as much. Luckily I had the foresight to make a tonne of roasted lemon potatoes to go with the chicken. I easily washed, peeled and chopped up eight large potatoes and at the end of our meal there was nothing left but the semolina crumbs.
Marinated Chicken with Cumin, Coriander & White Wine

This recipe is originally for marinated turkey breast. We're not particularly fond of turkey so I decided to use a whole chicken which I then sectioned into six parts. I also upped the ante quite a bit with regards to the herbs, garlic, lemon and cumin.
Ingredients
One 1.8kg/4lb organic chicken, sectioned into six pieces
A bunch of mint
A bunch of flat leaf parsley
A bunch of coriander
3 cloves of garlic
Juice and the zest of one lemon
2-3tsp ground cumin
100ml olive oil
150ml of white wine
Sea salt & freshly ground black pepper

Method
1. Place the herbs, garlic, olive oil, cumin, wine, salt and pepper and lemon juice and zest in the food processor and process until you have a smooth marinade. Put the chicken pieces in a non-metallic container and pour the marinade over it. Massage the marinade into the meat and then cover and place in the fridge overnight to marinade.
2. Preheat the oven to 220C/430F/Gas mark 7. Remove the chicken pieces from the marinade and place in a roasting pan. Cook for 30-45 minutes until the chicken is done.
3. Meanwhile place the remaining marinade in a saucepan and gently simmer for 15-20 minutes until it has reduced by about half. Season to taste.
4. Remove the chicken from the oven and serve with the warm sauce.

This looks & sounds amazing, I love the addition of mint. I have a similar recipe for shrimp, that is grilled on the barbie. :) It is delicious.

The kids love chicken so I am constantly trying to find interesting ways to prepare and serve it. They utterly enjoyed it despite it's 'greeness' and the abundance of herbs - so no doubt we will be having this more often!
