Bacon Breakfast with a slight twist

Miss Hoover doesn't go to kindergarten on Fridays so we have decided to make Friday mornings - 'Girl Time'. After we drop her brother off to school we then go to a local café for a leisurely breakfast and a good old chinwag. It's proving to be a great time of bonding for us and we also get to debrief about her rather hectic week. You'd be surprised how much stuff a 4yr old has to debrief about. In the short space of an hour we managed to cover - Bling, favourite books, ballerinas and how to make gingerbread men.
I decided to have the poached eggs with Istra bacon on sourdough toast which was divine. I have never tasted Istra bacon before but have had several girlfriends rave about it. Hoover had cereal before we left the house so she decided to have pink milk and a gingerbread man. Being the bacon freak that she is she then proceeded to devour most of the bacon off my plate after she had just scoffed her gingerbread man and downed all her pink milk. I decided to grab some Istra bacon to have for breakfast on Saturday morning and this is what we had.
Bacon, Fetta, Dukkah & Honey on Sourdough Toast
This is essentially bacon on toast with a slight twist. I like to serve the bacon on thickly sliced sourdough, but if you're feeling adventurous you could also serve the bacon on French toast. I know it's second nature for some of you to slather your bacon with maple syrup, but in this instance I insist you don't as maple syrup will just drown the dukkah and fetta in a mass of sweetness.
Ingredients
8 slices of thickly sliced sourdough toasted
8 slices of bacon
100 grm of creamy Greek fetta
Dukkah
Honey
Method
1. In a non stick fry pan gently fry the bacon until crisp
2. While bacon is frying away toast your sourdough bread
3. Place bacon on buttered toast and top with crumbled fetta, a sprinkle of dukkah and then drizzle with honey and serve
Serves 4

Yes I did and it was delicious and quite reasonably priced! Proof is in the eating I say and once you try it your won't ever eat that stuff you get from the supermarket - again!

I have found Istra bacon and smallgoods at 'The Green Grocer' in St Georges rd, North Fitzroy and at 'The Phoenix & the Turtle' in Union rd, Moonee Ponds. You can also get it for half the price at 'Ganims Market Fresh' in Piper st, Kyneton. If none of those options suit then click on the Istra link in the post and contact them directly and they will be able to let you know where else you can get it from in Melbourne.
